Catskill Distilling started their journey into Craft Distilling with the passage of the NYS Farm Distillery Bill which allowed for self distribution and the new micro-industry of Craft Distilling in New York State. The Distillery was opened in Bethel, NY in 2011 along with the Dancing Cat Saloon to support the Farm to Table scene and the Stray Cat Gallery to feature Local and 2nd Home Artists.
